The Emile Henry shell dish design is one of their classics, and perfect for appetizers. What sets Emile Henry shell dish appetizer ceramics apart from all other like products is the rich color of their glazes, their exclusive “Ceradon” manufacturing process, and the ability to take them from oven-to-table, or even freezer-to-oven. The 2 ½ inch miniature high glazed dishes have the appearance of the bottom half of an open clam shell. Their glossy surfaces are available in red, white, yellow, green or blue. They are available in matching sets, or in a variety of colors for an equally stunning presentation.
The fired Burgundy clay provides a slow conductivity that takes approximately ten minutes longer to cook than metal cookware, but also retains heat sitting at your table for much longer than other forms of bakeware, cookware, and serveware. The Emile Henry extremely hard glazed shell dishes are easy to clean by hand or in the dishwasher. They are chip, crack, and stain resistant. They can withstand daily use although they are decorative enough to be appropriate for the most special occasions. Popular uses for the shell dishes include appetizers to start a meal, preparing ingredients for your meal, or for condiments and sauces.

One of Emile Henry's classics is their pie dish, or Le Grand Pie Dish . The Le Grand pie dish has a fluted edge, bright white interior with an exterior available in 12 colors. Colors that are only sold in the 9 inch size are pink, sky blue, fig, sand, slate, and black. Colors that can be bought in two to four inch sizes are figue, white, red, green, blue and yellow. The green, blue and yellow can all be purchased in the greatest variety of sizes at 9 inches, 5.5 inches, 12 inches and 8 inches.
The food cooked in your Emile Henry clay dishes will take longer to heat than those cooked in metal, so expect to add about ten minutes on average to your cooking time. The double glaze will keep you from having to add a lot of fats to your crust for it to come out of the pan easily. One of the advantages to the way that clay diffuses heat more slowly is that the crust will be flakier, browned more perfectly, and it will actually retain its heat and stay warmer for a longer period of time sitting at the table.
